While on a Gemmotherapy program everyone needs to eat the equivalent of 3 complete vegetable proteins per day.
Here are some helpful conversions for building complete proteins:
2/3 cup cooked grain with 1/3 cup cooked beans, lentils, and split peas = 1 complete protein
2/3 cup cooked grain with goat’s milk or almond milk = 1 complete protein
2/3 cup cooked pasta with 2 TBSP seeds or nut butter = 1 complete protein
Bread with 2 TBSP seeds or nut butter = 1 complete protein
Protein Conversion
8 ounces of animal protein = 2 complete vegetable proteins
If eating animal protein 2 times a day, reduce animal protein to 6 ounces each serving
Eggs = 1 complete vegetable protein only!
Cheese = 1 complete vegetable protein only!

Oatmeal, Walnut, Date, Banana Cookies
Try these sweet and delicious treats for a healthy alternative to packaged cookies.
Oatmeal, Walnut, Date and Banana Cookies
Ingredients:
• Rind of 1 lemon
• 2 cups rolled oats
• ¼ cup safflower oil
• 3 ripe bananas (mashed)
• ½ cup pitted and finely chopped dates
• Pinch of salt
• 2 tsp vanilla
• ½ cup walnuts
Directions:
Combine all ingredients.
Drop by tablespoon onto cookie sheet.
Flatten by pressing with a wet spoon.
Bake at 350˚ for 30-45 minutes, turning over at the mid-point of baking.
Cool, serve and enjoy!

Cilantro Chelating Pesto Recipe
This recipe helps detoxify heavy metals from your body, and can be used to prevent disease. Take two teaspoons a day for optimal health.
Cilantro Chelating Pesto Recipe
Ingredients:
4 cloves
1/3 cup Brazil nuts (selenium source)
1/3 cup sunflower seeds (cysteine source)
1/3 cup pumpkin seeds (zinc, magnesium sources)
2 cups packed fresh cilantro (coriander, Chinese parsley) (vitamin A source)
2/3 cup flaxseed oil
4 tablespoons lemon juice (vitamin C source)
2 tsp. Dulse powder or Kelp powder
Bragg’s Liquid Aminos
Directions:
• Process the cilantro and flax seed oil in a blender until the cilantro is chopped.
• Add the garlic, nuts, seeds, dulse, and lemon juice and blend until the mixture is a fine paste.
• Add a squirt of Bragg’s Liquid Aminos to taste and blend again.
• Store in dark glass jar.
The mixture freezes well, so you might consider purchasing cilantro in season and filling enough jars to last throughout the year.

Potato Latkes
This is a traditional recipe for latkes (potato pancakes) which has been adapted to work with the food combining program. Using the substitutions for white potatoes make this recipe a great accompaniment to meat!

2 cups grated root vegetables:
(Try Jewel or Japanese sweet potato and parsnip, or Zucchini and carrots)
2 whole eggs
1/8 tsp. baking powder
Salt, pepper and grated onion (to taste)
1 Tbsp bread crumbs
1.) Peel root vegetables and grate
2.) Beat eggs and mix with rest of ingredients, adding a little pepper
3.) Drop onto skillet well greased with coconut oil. Brown on both sides serve.
Comment:
I use the large holes on the grater and usually leave the skins on when I am using white potatoes. White potato tastes best fried in butter vs olive oil, but I haven't tried cooking them in coconut oil or duck/goose fat. The sweet potato tasted great sauteed in coconut oil. Since I don't keep bread crumbs or wheat germ in the house I will take my fine grater/rasp and make the bread crumbs from the wheatless bread I have at home. The white potato gives off lots of water, but I just keep mixing it.
